Right now fresh kale is in abundance in the grocery store, and it looks so tasty right now.
I picked up a bunch and was planning to simply saute and serve with some vegan butter, but I woke up this morning feeling like I could go for a hearty soup/stew.
A quick Google search revealed that Kale Soup was one of the top uses for fresh or canned or frozen kale. I figured I’d give it a try. Also, I found a couple of other recipes from AllRecipes.com and CanadianLiving.com which might be tasty to try out later.
