What We Ate: Cosmic Cashew Kale & Confetti Quinoa

I follow Susan V of Fat Free Vegan Kitchen on Twitter (@susanffvk) and she tweeted earlier this week that one of her recipes was selected and featured on the BlogHer network for Meatless Monday.

So, naturally I checked it out and the photos she had on her post sold me on giving the recipe a try.  Also, I just had some kale and swiss chard in our most recent CSA share and wanted to do something different with it than just a saute.

I didn’t have chickpeas in my pantry, though I almost always do most times. I texted Levi to pick some up and three hours later he showed up with two cans. By then I had already eaten and held leftovers for him.

Next time I’ll make sure to try it with chickpeas because I am sure it would only make this taste better. It was already amazing with my omission.

I threw the Swiss chard in with the kale because I didn’t have what I would consider a full bunch of kale from the grocery store. Combined it worked out to the perfect amount.

The cashew cream sauce is such a nice texture and treat.

Oh, and the quinoa – as always, my favourite – was a keeper!

I am so glad this recipe got shared this week. You should give it a try for sure.
