Using ingredients from your pantry and any vegetables you want to use up in the fridge, this is an inexpensive and quick meal - perfect for a busy weeknight.

Serves: 4
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, minced
  • 2 tablespoons Thai red curry paste
  • 1 10oz can coconut milk
  • 1 cup dried red lentils
  • 2 cups water
  • 1 zucchini, cut into half-moons
  • 1 10oz can baby corn
  • 1 4oz can sliced water chestnuts
  1. Heat olive oil in a large skillet over medium heat.
  2. Saute onion, garlic, ginger until onion begins to soften, about 4-5 minutes.
  3. Add curry paste. Saute for a minute longer.
  4. Add coconut milk and lentils and 1 cup of water. Stir to combine.
  5. Add zucchini, baby corn and water chestnuts.
  6. Reduce heat to minimum and let simmer for 20 minutes, adding remaining water as necessary.
  7. Serve over rice or quinoa.

    Where do u get the red curry paste from?

      You can usually find Thai red curry paste in the Asian aisle in your supermarket. If you have an Asian market in your city you will definitely find it there. Important to note about curry pastes is that some do contain shrimp or fish. The brand I buy does not. Just check the ingredients to make sure, if that’s important to you. :)

    OH MY GOSH!!! I LITERALLY JUST cooked this and my husband is about to bring our daughter home from piano class to eat it!!! This is 2 weeks of trying completely NEW and DELICIOUS vegan/gf recipes and after my botched up pizza I’m so glad I can’t serve them this DELICIOUS meal!!! PRAISE GOD!!! YuMMy!!!

    Just made this up. Gotta admit it is good, however I feel that there is too many Lentils, for my liking. I also added more Red Curry Paste to mine as well and some leeks.

      Glad you liked it Babs. You can always reduce the amount of lentils if you’d prefer less. Love the idea of adding leeks too! Yum!
