Herb & Garlic Lentil Crackers

This is a recipe full of firsts for me.

I’ve never made anything with lentil flour before. I love lentils so it’s kind of weird that lentil flour hasn’t made it’s way in my kitchen until now. Thanks to Cuisine Soliel for sending me a bunch to sample it’s helped push me out of my comfort zone a bit. And it’s been a happy thing.

Another first would be that I’ve never made crackers of any kind until this recipe. But when I thought of lentil flour I immediately thought of the lentil crackers I see in the stores but never buy because while they are totally gluten-free they are not vegan. Now I can enjoy homemade lentil crackers of my own. Now, I don’t know if these compare to the store-bought ones since I’ve never tried them, but I like to hope and think that they are even better!

Since this was my first time making crackers I took to the internet for some help. I found an excellent recipe from Oh She Glows (love that site!) which I stuck fairly closely to aside from adjusting seasonings and using lentil flour. The recipe turned out really awesome.

Herb & Garlic Lentil Crackers

These lentil crackers are sure to please at any party. Serve with homemade hummus or macadamia nut cheese spread.

Ingredients
  • ½ cup finely ground lentil flour (such as Cuisine Soleil brand)
  • ¾ cup almond meal
  • 1½ teaspoons garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt-free herb seasoning (such as Mrs. Dash)
  • ½ teaspoon sea salt
  • 2 tablespoons ground flax
  • 1 tablespoon nutritional yeast
  • 2 tablespoons sesame seeds
  • ¼ teaspoon baking soda
  • ¼ cup water
  • ½ teaspoon olive oil
Instructions
  1. Preheat oven to 350°F.
  2. In a bowl combine all dry ingredients and mix well.
  3. Add water and olive oil. Stir to combine.
  4. Turn dough out onto a sheet of parchment paper.
  5. Knead dough with hands until a smooth ball forms.
  6. Roll out on parchment as thin as possible without dough tearing.
  7. Slide rolled out dough on parchment to a baking sheet.
  8. Use a pizza cutter to trim off any edges that may overlap edge of baking sheet. Carefully move those edge bits to another part of the baking sheet. Cut the remaining dough into nice squares about 1 inch by 1 inch.
  9. Bake in preheated oven for 22 minutes until nicely browned and crisp.
  10. Remove from oven and let cool on baking sheet for 10 minutes before serving or storing in an airtight container.

      Yes they sure do! I was really pleased with the results. The crackers were crunchy and didn’t crumble to bits when you bite into them.

    I would love to try these flours. I would enjoy the adventure of using them is all sorts of recipes! The crackers you made look fantastic, so I would do that for sure. I would also try some biscuits, bread and muffins. And then… I’d get creative!

    I am intrigued by the lentil crackers. I’ve never made crackers, so I’d give those a whirl. I imagine them to be tasty with some hummus. I’d use the buckwheat flour for crêpes salées; they are delicious, and I miss them!

    Well I can’t find buckwheat or lentil flour here, so I’m going to try making my own. If it turns out ok, I’ll try making buckwheat tortillas.

      What kinds of gluten free flours are you able to get where you live Krysia? Just curious. If you’ve got a high powered blender (Vita-Mix for example) you can definitely grind your own buckwheat flour. You might be able to get a decent grain mill there that might do the job!

    Since you hydrated the lentil flour with water, can we cook ordinary lentils and puree them?

      I don’t think cooking lentils and pureeing them would work. I think the amount of liquid that would be in the recipe would be way too much in this case. The amount of water being used with the lentil flour is not even close to how much moisture I imagine would come out of cooked pureed lentils. Sorry.

    hi….i live in greece and it’s hard to find lentil flour in my town….i’ve made my own lentil flour and strained it but i don’t know if it will work….what do you think?

      If you have a high-powered blender (like a Vitamix) with the special jar/blade to grind grains you should be able to grind up dried lentils into a lentil flour. If you have a grain mill you could also try grinding your own dried lentils. You will probably need to grind in batches and grind down the lentil flour a few times to get it fine enough to work in a recipe like this. Good luck!
